I love breakfast. It’s probably my favorite meal of the day. But I’ll be honest, sometimes I get stuck in a rut and make the same things a few times a week. If you’re anything like me, you understand. Well, this newbie of recipe needs to be added to your weekly rotation.
Feel free to swap out the meat or veggies for anything you have on hand or sounds good. It’s such a versatile recipe where anything goes.
Ingredients
- Siete or grain-free tortillas
- scallions
- nitrate-free organic turkey and/or ham
- shredded cheese
- eggs
- spinach
- salsa
- avocado
- salt and pepper
- avocado spray
- ramekin
- microgreens (optional)

Crispy Tortilla Egg Cups
Ingredients
- 4 Siete cassava or almond tortillas
- 4 eggs
- 2 slices of ham or turkey diced
- 1/3 cup chopped spinach
- 1/4 cup shredded mozarella cheese divided into each cup
- 2 scallions chopped
- 1/4 cup red bell pepper diced
- salt and eppper to taste
- avocado spray
- 4 ramekins
- TOPPINGS
- avocado
- salsa
- everything but the bagel seasoning
Instructions
- Preheat oven to 425°
- On the stovetop, heat tortillas for about 10-15 seconds per side.
- Spray each ramekin with avocado spray and lay the tortilla in each one.
- Crack an egg into each tortilla cup.
- Add the remaining toppings and bake for about 20 minutes.
- Remove and llow for it to cool for about 5 minutes. Serve with avocado and salsa and enjoy
