One thing on my weekly meal plan rotation is a batch of overnight oats. It’s quick to make, takes less than 10 minutes, and is great for busy weekday mornings when you have no time to cook. My boys and I love overnight oats and this Peaches & Cream is a fun way to use seasonal fruit.

Here’s What You Need

  • almond milk, coconut milk, or any type of milk
  • rolled oats, make sure it’s labeled gluten-free if you have any allergies
  • vanilla protein powder, I love Truvani because the ingredients are clean and simple
  • vanilla extract
  • organic peaches
  • chia seeds
  • hemp seeds
  • granola, optional
  • mint
  • plain or vanilla yogurt for topping

Peaches & Cream Overnight Oats

A simple and delicious way to use up those summer peaches is by making these Peaches & Cream Overnight Oats. It's gluten-free, vegan, and the perfect meal prep option.

Ingredients
  

  • 2 cups gluten-free rolled oats
  • 2 ¼ cups canned coconut milk or almond milk, or any preferred milk
  • 3 tbsp chia seeds
  • 2 tbsp hemp seeds
  • 2 scoops vanilla protein powder. I like Truvani
  • 1 tsp ground cinnamon
  • 1 ½ peaches chopped, plus more for topping
  • 1 tsp vanilla extract
  • 1 plain or vanilla flavored yogurt for topping
  • mint for garnish optional
  • granola for topping optional

Instructions
 

  • In a large bowl, add all the ingredients (EXCEPT Mint, yogurt, and granola) and whisk well to combine.
  • Divide the mixture into 3 large or 6 small containers and refrigerate for at least 5 hours or overnight.
  • Remove from the fidge and top it with yogurt, more peaches, and if using, mint and/or granola.
  • Can be stored in the fridge for 3-4 days.
  • Enjoy!
