- 4 Siete cassava or almond tortillas
- 4 eggs
- 2 slices of ham or turkey diced
- 1/3 cup chopped spinach
- 1/4 cup shredded mozarella cheese divided into each cup
- 2 scallions chopped
- 1/4 cup red bell pepper diced
- salt and eppper to taste
- avocado spray
- 4 ramekins
- TOPPINGS
- avocado
- salsa
- everything but the bagel seasoning
Preheat oven to 425°
On the stovetop, heat tortillas for about 10-15 seconds per side.
Spray each ramekin with avocado spray and lay the tortilla in each one.
Crack an egg into each tortilla cup.
Add the remaining toppings and bake for about 20 minutes.
Remove and llow for it to cool for about 5 minutes. Serve with avocado and salsa and enjoy
