Ingredients
  

  • 4 Siete cassava or almond tortillas
  • 4 eggs
  • 2 slices of ham or turkey diced
  • 1/3 cup chopped spinach
  • 1/4 cup shredded mozarella cheese divided into each cup
  • 2 scallions chopped
  • 1/4 cup red bell pepper diced
  • salt and eppper to taste
  • avocado spray
  • 4 ramekins
  • TOPPINGS
  • avocado
  • salsa
  • everything but the bagel seasoning

Instructions
 

  • Preheat oven to 425°
  • On the stovetop, heat tortillas for about 10-15 seconds per side.
  • Spray each ramekin with avocado spray and lay the tortilla in each one.
  • Crack an egg into each tortilla cup.
  • Add the remaining toppings and bake for about 20 minutes.
  • Remove and llow for it to cool for about 5 minutes. Serve with avocado and salsa and enjoy
