Breakfast Hashbrown Avocado Toast

Trader Joe’s has the best hashbrown patties. Bake them in the oven until nice a crispy and you have a nice base for the toast.

This toast has a delicious sauce. I call it my In-n-Out secret sauce only mine isn’t so secretive LOL. It’s my take on their famous sauce a layered the crispy hashbrown with it and then finished the toast off with a drizzle more. This sauce can definitely be made ahead of time.

For the toast itself, you know I had to balance the blood sugar with important food components which are: Fat, Fiber, Protein, and Greens. Loaded with a scrambled egg, sliced avocados, juicy tomatoes, and spinach. Enjoy!

  • spinach
  • hashbrown patties
  • tomatoes
  • avocado
  • avocado
  • pickled relish
  • white vinegar
  • ketchup
  • salt
  • pepper
  • everything but the bagel seasoning

Ingredients
  

  • 2 frozen hashbrown patties
  • 2 eggs
  • 1 avocado sliced
  • 1 to mato sliced
  • 1/4 cup spinach
  • 1 tbsp ghee
  • 1 tbsp ebbs
  • salt and pepper to taste
  • chives for garnish
  • SPECIAL SAUCE
  • 1/4 cup vegan mayo
  • 2 tbsp ketchup
  • 2 tbsp pickled relish
  • 1 tbsp white vinegar
  • salt and pepper to taste

Instructions
 

  • Cook the hashbrowns acoording to the package. I like mine crispy for this recipe.
  • FOR THE SAUCE: whisk all the ingredients together in a bowl and set aside.
  • On low heat, add the ghee. In a small bowl, whisk the eggs until frothy. Once the skillet is warm add the eggs and let it set until it almost looks like an omlette. Turn heat off and flip or slightly scramble the other side. Let the heat finish cooking the egg.
  • On the cripsy toast, add a layer of the secret sauce. Next add the spinach. Top it with the egg, sliced avocados, tomatoes, ebb seasoning, salt and pepper to taste. Then drizzle a little more sauce right on top and garnish with chives.
