Ingredients
  

  • SALAD
  • 1 head Romaine chopped
  • 3 hard boiled eggs quartered
  • 4 strips of fresh cooked bacon chopped
  • 3/4 cup cherry tomatoes halved
  • 3 scallions minced
  • 2 Persian cucumbers diced
  • 5 hearts of palm drained and rinsed and sliced
  • 1 green bell pepper sliced
  • CHICKEN
  • 4 Chicken thighs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1 tbsp avocado oil for cooking
  • GREEN GODDESS DRESSING
  • 1/4 cup chives rough chopped
  • 1/4 cup Tarragon rough chopped
  • 1/4 cup Dill rough chopped
  • 2 tbsp Parsley rough chopped
  • 3/4 cup Mayo
  • 3/4 cup Sour cream
  • 1/2 Lemon juiced
  • 1 Garlic clove
  • Salt
  • Pepper

Instructions
 

  • To make the dressing, add all ingredients in a small food processor and blend well. Set aside.
  • Heat a non-stick cast iron skillet to medium with avocado oil. Season the chicken with the remaining ingredients and cook the chicken for about 6-7 minutes per side. Allow for them to cool for 10 minutes then dice them up.
  • In a salad bowl, add the Romaine, scallions, hearts of palm, cherry tomatoes, eggs, cucumbers bacon , bell pepper, and chicken. Add the dressing and toss well. Serve and enjoy!
