My mom has made this salad every year for as long as I could remember. It’s so easy to make and enjoy for a few days and the longer the flavors sit together, the better the flavor. Summertime always meant grilling tacos and enjoying this side salad. It’s a great refreshing way to enjoy lima beans which are not a veggie you see most people eat on the regular. Minimal ingredients and is absolutely tasty.

  • frozen bag lima beans
  • red onions
  • basil
  • parsley
  • tomatoes
  • salt
  • pepper
  • olive oil
  • lemon juice

Ingredients
  

  • 1 bag frozen lima beans
  • 1 cup cherry tomatoes quartered
  • 1/2 red onion diced
  • 1 bunch parsley minced
  • 1/2 cup fresh basil rough chopped
  • 1 lemon juiced
  • 2 tbsp olive oil
  • salt and pepper to taste

Instructions
 

  • Heat a medium pot of water and cook the lima beans for about 5-10 minutes.
  • Meanwhile, in a bowl, add the remaining ingredients. Once the lima beans are cooked, add the lima beans and toss well.
  • Adjust seasoning as needed and store the salad in the fridge until ready to serve.
  • I like to let the flavors marinate for a few hours before serving so feel free to prep this early and serve it for dinner.
  • Enjoy.
