I love seafood and so does my youngest, so salmon is always on my weekly rotation. But with this pandemic and everyone being quarantined inside the house, there are a lot more dishes we are cooking up and having to wash. So, I am trying to make it a point to make clean up a lot less work after a long day being home. This one is a great one! Here is my Sheet Pan Green Goddess Salmon with Roasted Veggies and Feta.

I love switching it up a bit since we eat it so much and one of my favorite ways these days is including a green goddess sauce right on top. The avocado sauce is packed with so many antioxidants from the fresh herbs that it just makes this whole dish. It really adds that punch of fresh citrus with the lemon and basil.

I tried to keep this dish whole 30 approved, but let’s face it…some things just taste a tad bit better with a little feta cheese. This was the last addition to the meal since I had some in the fridge and I am so glad I included it. It just adds a subtle salty bite. You can definitely omit this if you are doing Whole 30 and it’ll taste just as great.

Sheet Pan Green Goddess Salmon with Roasted Veggies and Feta

A one -pan weeknight meal that's both healthy and fast to whip up.
Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes

Ingredients
  

  • 4 Salmon Fillets
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • salt and pepper to taste
  • broccoli
  • bag of baby potatoes cut in half
  • 1 cup diced butternut squash
  • 1 lemon zested and sliced
  • 2 tbsp olive oil plus 1 tbsp
  • feta cheese optional
  • Green Goddes Sauce
  • 1 avocado
  • 1 lemon juiced
  • handful basil cilantro, dill, and mint
  • 1/4 cup dairy-free plain yogurt or yogurt of choice
  • 1/2 tsp ground cumin
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 425
  • On a parchment paper-lined baking sheet, add potatoes, 2 tbsp olive oil, salt and pepper and mix. Bake for 15 minutes and remove from oven.
  • In a large bowl, add broccoli and butternut squash and season with olive oil salt and pepper. Set aside.
  • On a plate, season salmon with olive oil, salt, pepper, lemon zest, garlic powder, onion powder, paprika and rub into salmon. add a few slices of lemon on top of salmon.
  • On the same baking sheet, add the veggies and mix with a spoon. Then move it all to one side of the baking sheet.
  • Add the salmon and add to the other side of the baking sheet and bake for another 15 minutes
  • Remove and rest for 10 minute
  • Green Goddess Sauce
  • In a blender, add all ingredients and blend until smooth.
  • To Serve
  • Add the salmon and the veggies on the plate and top salmon with the green goddess.
  • Spread some extra green goddess sauce and top with feta.
  • Sprinkle with lemon juice, crumbled feta, and fresh herbs and enjoy.
