Is there anything better than Greek food? It is literally my weakness. Mainly because I am half Armenian and we cook with very similar ingredients and flavor. So with that, I present to you my Greek Meatballs with Lemon Pasta

Since I am quarantined in my house due to the COVID virus, I am cooking up a storm and creating new recipes. Hope you’re ready for a ton of food content coming your way.

I don’t typically crave meatballs very often, but when I do, I throw down on them. With the supermarket being scarce these days, I found some fun Mediterranean ingredients to whip up some Greek Meatballs and let me tell you, they’re so dang good.

These meatballs are packed with flavor. In fact, I started making them without the feta cheese inside, halfway through rolling them, I decided to add some feta cheese and holy moly, you guys…Such a game-changer. I was originally trying to keep this whole 30 approved but that feta cheese was calling my name.

Side note: my favorite brand of gluten-free pasta is the Jovial brand. I’ve recently been stocking up on them from my favorite online shop. The one pictured here is Ancient Grains and not my favorite but all I could find during these difficult quarantined times.

To keep the recipe whole 30, just omit the feta cheese and pasta. But if you’re looking to splurge on the good stuff, I’d say go for it. I wish I made a double batch because there were no leftovers.

There you have have it, easy greek meatballs that can be made ahead of time as a meal prep and cooked quickly either on the stovetop of baked in the oven. I really hope you enjoy them as much as my family and I did.

Greek Chicken Meatballs with Lemon Pasta

Greek Meatballs with Lemon Pasta

Ingredients
  

  • Greek Meatballs
  • 1 lb ground chicken
  • 1 lemon zested
  • 2 garlic cloves chopped
  • 1 shallot chopped
  • 1 tbsp oregano chopped
  • 1 tbsp parsley chopped
  • 1/2 tbsp mint chopped
  • 4 tbsp feta crumbled
  • salt and pepper to taste
  • 4 tbsp olive oil
  • Lemon Pasta
  • 1 Box gluten-free pasta I like Jovial
  • 3 tbsp melted ghee
  • 1/2 lemon juiced
  • salt and pepper to taste
  • 1/2 tsp ground garlic
  • Fresh parsley mint, oregano to taste

Instructions
 

  • Greek Meatballs
  • Heat a cast-iron skillet, and add some olive oil.
  • In a large bowl, add all ingredients and mix with your hands.
  • Form balls and add them to the skillet. Cook for a total of about 7 minutes flipping them every 2-3 minutes per side.
  • Lemon Pasta
  • Cook pasta according to the package.
  • Once cooked and al dente, drain the pasta and add the remaining ingredients.
  • Plate the pasta, meatballs, and choice of veggie and squeeze a dash more of lemon, add some more herbs, and crumbled feta.
