Mediterranean Halibut Packets

Raise your hand if you love a quick simple dinner with hardly any dishes to wash after? Yes, indeed. I have been making fish packets for a long time because 1) the flavors all cook and steam together making it all so juicy and 2) very little clean up. You can do this with shrimp or any fish you love. Make it a teriyaki packet if you wish. Better yet, bake it in the oven or on the grill. Both work great.

The flavors of the halibut with lemon, herbs, and citrus tomatoes and capers are just heaven on earth. Add a splash of pinot grigio wine or omit if doing whole 30. But I promise, with each bite, you’ll be craving more and more.

Mediterranean Halibut Packets

Course Main Course

Ingredients
  

  • 4 halibut fillet
  • 3 lemons sliced
  • cherry tomatoes halved
  • can of artichokes drained and cut in half or buy them halved. you can also use hearts of palm
  • 2 tbsp capers
  • 1 bunch of asparagus washed and trimmed
  • 1 tbsp fresh thyme
  • 1 tbsp fresh oregano
  • 1 tbsp lemon pepper my personal favorite
  • 1/2 tsp salt
  • garlic and onion powder to taste
  • 2 tbsp olive oil
  • 2 tbsp Pinot Grigio

Instructions
 

  • Pre heat over to 375
  • Cut 4 large parchment papers the same size
  • Lay about 4 slices of lemon on each parchment paper in a row
  • In a bowl, add the asparagus, a drizzle of avocado oil, and lemon pepper and toss well
  • Add the asparagus on top of the lemons
  • Then add the halibut on top of the asparagus
  • Add a splash of wine (if not doing whole 30)
  • Season halibut with avocado oil, lemon pepper, garlic powder, onion powder, and salt
  • Add the thyme and oregano
  • Add tomatoes, artichokes, capers, and a squeeze of lemon juice
  • Wrap parchment paper and place on baking sheet and bake for about 15-20 min.
  • remove from oven and allow to rest for 10 min before opening.
