Zoodles are such a great way to incorporate veggies into a meal but it also makes this dish low carb. You can simply buy pre-spiral used zucchini noodles or if you have a spiralizer, buy zucchini and make the noodles yourself. It’s cheaper that way too.

  • Zucchini or zucchini noodles
  • Ground beef
  • Coconut aminos
  • Onion
  • Lime
  • Basil
  • Mint
  • Cilantro
  • Scallions
  • Garlic

Ingredients
  

  • 3 zucchinis spiraled or Zoodles
  • 1 lb ground beef
  • 1/2 yellow onion, diced
  • 4 tbsp coconut aminos
  • 2 tbsp rice vinegar
  • 1 tbsp gluten-free Gochjang Chili Paste
  • 1/2 lime juiced
  • 2 tbsp avocado oil
  • 2 garlic cloves minced
  • 2 scallions chopped into large pieces
  • 3 tbsp chopped cilantro
  • 3 tbsp chopped basil
  • 3 tbsp chopped mint
  • Sesame seeds for topping

Instructions
 

  • In a large skillet, add the avocado oil and onions and sautee for 4 minutes.
  • Next, add the ground beef and cook making sure to break up the meat. Add in the garlic and cook together.
  • Once the meat is cooked, add the gochujang chili paste, ginger, salt, and pepper taste.
  • Add in the Zoodles, coconut aminos, rice vinegar, lime juice, cilantro, basil, and mint. Cover and cook until the Zoodles are soft (about 7 minutes).
  • Top with sesame seeds and enjoy!
