Ingredients
  

  • BUTTERNUT SQUASH
  • 1 small/medium butternut squash peeled and diced
  • 2 tbsp olive oil
  • 1 tbsp za’atar seasoning
  • salt and pepper to taste
  • 1 tbsp toasted pine nuts
  • 1 tbsp chopped cilantro
  • 1 tsp sumac seasoning
  • LEMON TAHINI SAUCE
  • 3/4 cup tahini
  • 2 tbsp olive oil
  • 1 garlic clove
  • 1 lemon juiced
  • 1/4 cup filtered water
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 400°
  • On a baking dish, add the butternut squash, olive oil, za’atar seasining, salt, and pepper. Toss and bake for about 25 minutes.
  • Meanwhile, add all the lemon tahini ingredients into a small food processor and puree. If the dressing is too thick, add a little more water at a time until it’s at a desired consistency.
  • Add the cooked butternut sqaush to a small platter. Pour the tahini dressing on top, add the pine nuts, cilantro, and sumac.
  • Serve and enjoy.
  • Note: if pomegranetes are in season, add a little on top for garnish, flavor, and holiday spirit.
