- 3 zucchinis spiraled or Zoodles
- 1 lb ground beef
- 1/2 yellow onion, diced
- 4 tbsp coconut aminos
- 2 tbsp rice vinegar
- 1 tbsp gluten-free Gochjang Chili Paste
- 1/2 lime juiced
- 2 tbsp avocado oil
- 2 garlic cloves minced
- 2 scallions chopped into large pieces
- 3 tbsp chopped cilantro
- 3 tbsp chopped basil
- 3 tbsp chopped mint
- Sesame seeds for topping
In a large skillet, add the avocado oil and onions and sautee for 4 minutes.
Next, add the ground beef and cook making sure to break up the meat. Add in the garlic and cook together.
Once the meat is cooked, add the gochujang chili paste, ginger, salt, and pepper taste.
Add in the Zoodles, coconut aminos, rice vinegar, lime juice, cilantro, basil, and mint. Cover and cook until the Zoodles are soft (about 7 minutes).
Top with sesame seeds and enjoy!
