Ultimate Asian Chicken Salad with Sesame Ginger Dressing
Ingredients
- CHICKEN SALAD
- 1 head of romaine chopped
- 1 1/2 cups shredded red cabbage
- 1/2 red onion diced or sliced
- 3 green onions/scallions chopped
- 3 radishes sliced
- 1 bell pepper sliced
- 1 cucumber diced
- 1/2 cup frozen and thawed shelled edamame
- 1/2 cup snap peas cut in half
- 1/2 cup shredded carrots
- 1/2 cup almonds
- 1 1/2 cups diced cooked organic chicken. I like to use any leftover chicken or buy a rotisserie chicken.
- Sesame seeds for garnish
- SESAME GINGER DRESSING
- 1/2 cup olive oil
- 1/4 cup toasted sesame oil
- 1/4 cup coconut aminos
- 1/4 cup unseasoned rice vinegar
- 2 garlic cloves
- 1/2- inch fresh ginger peeled
- dash of salt
Instructions
- In a large salad bowl, add all the salad ingredients.
- Meanwhile, in a small blender or food processor, add all the dressing ingredients and blend until smooth.
- Pour the dressing on the salad and toss well.
- Top with sesame seeds (optional).
