I love peaches and strawberries so when my friend ordered an organic case from Georgia and gave me a stash, I needed to use them up. This is a tasty recipe that takes next to no time to make using seasonal fruit. It’s loaded with fresh herbs, mozzarella balls, and healthy fats such as avocados. It’s hormone-healthy and divine.

Be sure to massage the kale with lemon, oil, and salt before layering on all the toppings to soften the leaves. This recipe will make 4 big salads or 8 small side salads.

Ingredients
  

  • 4 cups kale chopped
  • 2 peaches diced
  • 1/2 cup sliced strawberries
  • 1/2 cup sliced cherry tomatoes
  • 1/2 cup sliced almonds
  • 1 avocado diced
  • 1 cup organic mini mozzarella balls
  • 1/2 cup chopped basil
  • 1/3 cup chopped mint
  • 2 tbsp olive oil
  • 1/2 lemon juiced
  • salt and pepper to taste
  • drizzle of balsamic glaze

Instructions
 

  • In a large bowl, add the kale olive oil, lemon juice, salt, and pepper. Massage well with your hands.
  • Next add in the remaining ingredients EXCEPT the balsamic glaze and toss well.
  • Plate the salad and drizzle a little balsamic glaze and enjoy!
