Summer nights are for grilling and spending less time in the kitchen. So I decided to whip up a tasty flavorful salad that’ll knock your socks off. The chicken is so moist and packed with so much flavor, and the salad is filled with a ton of tasty veggies. It’s like eating the rainbow. Great for gut health might I add.

The chicken is grilled to perfection but I must say, that marinating this chicken is KEY for the ultimate flavor bomb. You can simply marinate it overnight which is great for meal prep or at least 5 hours. You can make a huge batch of the chicken and enjoy it all week long in salads or by itself with veggies and/or grains.

Ingredients
  

  • Marinated Greek Chicken
  • 3 chicken breasts
  • 1/4 cup olive oil
  • 1 lemon juiced and zested
  • 3 garlic cloves minced
  • 1 yellow onion sliced
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp dried parsley
  • 1 tbsp dijon mustard
  • 1 tbsp sumac
  • salt and pepper to taste
  • SALAD
  • 1 head of romaine
  • 1/2 cup pitted olives and kalamata olives
  • 1/2 cup sliced cherry tomatoes
  • 1/3 cup peperoncini
  • 1 persian cucumber sliced
  • 1/2 cup crumbled feta
  • 4 bard boiled eggs
  • 1/4 cup fresh chopped parsley
  • 1/4 cup fresh chopped mint
  • 1 tsp dried oragano
  • DRESSING
  • 2/3 cup olive oil
  • 1/2 cup red wine vinegar
  • 1 tbsp dijon mustard
  • 1/2 lemon juiced
  • 1/2 tsp grund turmeric
  • 1 tsp dried oregano
  • 1 tsp ground onion powder
  • salt and pepper to taste

Instructions
 

  • For the Marinated Chicken, add all the chicken ingredients into a glass container. Mix well and marinate for at least 5 hours or overnight.
  • Meanwhile, make the salad. Add all the ingredients into a salad bowl and set aside.
  • Make the dressing by combining all the dressing ingredients. Whisk well and set aside.
  • For the chicken, heat a grill to medium heat. Once it’s hot, grill the chicken for about 6-7 minutes per side depending on how thick it it. Remove and allow for it to rest for 10 minutes before slicing.
  • Add the marinated onions that were with the chicken and cook them for a few minutes as well and add them to a salad.
  • Add the sliced chicken, pour the dressing, and enjoy!
