Ingredients
  

  • CHICKEN SALAD
  • 1 head of romaine chopped
  • 1 1/2 cups shredded red cabbage
  • 1/2 red onion diced or sliced
  • 3 green onions/scallions chopped
  • 3 radishes sliced
  • 1 bell pepper sliced
  • 1 cucumber diced
  • 1/2 cup frozen and thawed shelled edamame
  • 1/2 cup snap peas cut in half
  • 1/2 cup shredded carrots
  • 1/2 cup almonds
  • 1 1/2 cups diced cooked organic chicken. I like to use any leftover chicken or buy a rotisserie chicken.
  • Sesame seeds for garnish
  • SESAME GINGER DRESSING
  • 1/2 cup olive oil
  • 1/4 cup toasted sesame oil
  • 1/4 cup coconut aminos
  • 1/4 cup unseasoned rice vinegar
  • 2 garlic cloves
  • 1/2- inch fresh ginger peeled
  • dash of salt

Instructions
 

  • In a large salad bowl, add all the salad ingredients.
  • Meanwhile, in a small blender or food processor, add all the dressing ingredients and blend until smooth.
  • Pour the dressing on the salad and toss well.
  • Top with sesame seeds (optional).
