This dish is easily something you can meal prep on a Sunday and enjoy later in the week. I will sometimes make it around lunchtime and reheat them before we leave for sports during the week. Serve it with a side of steamed veggies, garlic bread, sourdough, or even better…add some diced zucchini into the meal.

Ingredients
  

  • 2 cans organic butter beans drained and rinsed
  • 2 pints cherry tomatoes
  • 4-5 garlic cloves minced
  • 1 yellow onion diced
  • 1 tbsp olive oil
  • 1/3 cup nut milk
  • 4 oz tomato sauce
  • 1/4 cup vegetable broth
  • 1 tbsp lemon juice
  • 1/4 cup fresh chopped tarragon
  • 1/4 cup fresh chopped basil
  • salt and pepper to taste

Instructions
 

  • In a large skillet, add the olive oil, onions, garlic, and cherry tomatoes. Cook until the tomatoes start to burst and become saucy. This could take about 15 minutes or so.
  • Next, season with salt, pepper, tomato sauce, almond milk, vegetable broth, butter beans. Cook for about 7 minutes.
  • Add the tarragon, basil, lemon juice and stir. Season with more salt and pepper until the seasoning is just right for you.
