- 2 cans organic butter beans drained and rinsed
- 2 pints cherry tomatoes
- 4-5 garlic cloves minced
- 1 yellow onion diced
- 1 tbsp olive oil
- 1/3 cup nut milk
- 4 oz tomato sauce
- 1/4 cup vegetable broth
- 1 tbsp lemon juice
- 1/4 cup fresh chopped tarragon
- 1/4 cup fresh chopped basil
- salt and pepper to taste
In a large skillet, add the olive oil, onions, garlic, and cherry tomatoes. Cook until the tomatoes start to burst and become saucy. This could take about 15 minutes or so.
Next, season with salt, pepper, tomato sauce, almond milk, vegetable broth, butter beans. Cook for about 7 minutes.
Add the tarragon, basil, lemon juice and stir. Season with more salt and pepper until the seasoning is just right for you.
