- In a large skillet, add the olive oil, onions, garlic, and cherry tomatoes. Cook until the tomatoes start to burst and become saucy. This could take about 15 minutes or so.
- Next, season with salt, pepper, tomato sauce, almond milk, vegetable broth, butter beans. Cook for about 7 minutes.
- Add the tarragon, basil, lemon juice and stir. Season with more salt and pepper until the seasoning is just right for you.
