Summer Lima Bean Salad

Ingredients
  

  • 1 bag frozen lima beans
  • 1 cup cherry tomatoes quartered
  • 1/2 red onion diced
  • 1 bunch parsley minced
  • 1/2 cup fresh basil rough chopped
  • 1 lemon juiced
  • 2 tbsp olive oil
  • salt and pepper to taste

Method
 

  1. Heat a medium pot of water and cook the lima beans for about 5-10 minutes.
  2. Meanwhile, in a bowl, add the remaining ingredients. Once the lima beans are cooked, add the lima beans and toss well.
  3. Adjust seasoning as needed and store the salad in the fridge until ready to serve.
  4. I like to let the flavors marinate for a few hours before serving so feel free to prep this early and serve it for dinner.
  5. Enjoy.
