Method
- Heat a medium pot of water and cook the lima beans for about 5-10 minutes.
- Meanwhile, in a bowl, add the remaining ingredients. Once the lima beans are cooked, add the lima beans and toss well.
- Adjust seasoning as needed and store the salad in the fridge until ready to serve.
- I like to let the flavors marinate for a few hours before serving so feel free to prep this early and serve it for dinner.
