I have been making this pasta salad for over 4 years now and in all honesty, I have no idea why I haven’t shared it sooner. It’s loved by all my family and friends. So perfect to bring to any upcoming party, BBQ, or lake trip.

I find this pasta is best eaten on the same day as gluten-free pasta tends to dry out by the next day. But I have still eaten it a day later and all it needs is a little more dressing or oil to loosen it up.

Here’s What You Need

  • GF pasta, I like Jovial
  • pepperoncini
  • salami
  • pepperoni
  • mortadella
  • black olives
  • parmesan
  • cubbed or fresh mozzarella
  • cucumbers
  • cherry tomatoes
  • red onions
  • basil
  • olive oil
  • dijon mustard
  • dried oregano
  • red wine vinegar
  • bell pepper

A simple and delicious Summer Italian Pasta Salad that also happens to be gluten-free. Perfect for BBQ's, pool parties, days on the lake, and more. Super simple to make and absolutely tasty.

Ingredients
  

  • PASTA SALAD
  • 1 box gluten-free pasta I like Jovial
  • 1/2 cup pepperoncini
  • 1 cup sliced salami
  • 1/3 cup sliced mortadella
  • 1 cup sliced pepperoni
  • 1 4 oz can sliced black olives drained and rinsed
  • 1 cup Persian or English cucumbers diced
  • 1 cup halved cherry tomatoes
  • 1 green bell pepper diced
  • 1/2 red onion diced
  • 1/2 cup freshly grated parmesan
  • 1 cup cubbed mozzarella or fresh mozzarella
  • 1 cup fresh basil torn
  • DRESSING
  • 1/2 cup olive oil
  • 1/3 cup red wine vinegar
  • 1 tbsp dried oregano
  • 1 tbsp dijon mustard

Instructions
 

  • Cook the pasta according to the package. Drain and poor into a large bowl.
  • Add in the remaining pasta salad ingredients.
  • Meanwhile, in a small bowl, whisk together the dressing ingredients. Pour over the pasta salad and toss.
  • Store covered until ready to serve and enjoy.
