Ingredients
  

  • PASTA SALAD
  • 1 box gluten-free pasta I like Jovial
  • 1/2 cup pepperoncini
  • 1 cup sliced salami
  • 1/3 cup sliced mortadella
  • 1 cup sliced pepperoni
  • 1 4 oz can sliced black olives drained and rinsed
  • 1 cup Persian or English cucumbers diced
  • 1 cup halved cherry tomatoes
  • 1 green bell pepper diced
  • 1/2 red onion diced
  • 1/2 cup freshly grated parmesan
  • 1 cup cubbed mozzarella or fresh mozzarella
  • 1 cup fresh basil torn
  • DRESSING
  • 1/2 cup olive oil
  • 1/3 cup red wine vinegar
  • 1 tbsp dried oregano
  • 1 tbsp dijon mustard

Method
 

  1. Cook the pasta according to the package. Drain and poor into a large bowl.
  2. Add in the remaining pasta salad ingredients.
  3. Meanwhile, in a small bowl, whisk together the dressing ingredients. Pour over the pasta salad and toss.
  4. Store covered until ready to serve and enjoy.
