Summer Italian Pasta Salad
A simple and delicious Summer Italian Pasta Salad that also happens to be gluten-free. Perfect for BBQ's, pool parties, days on the lake, and more. Super simple to make and absolutely tasty.

- PASTA SALAD
- 1 box gluten-free pasta I like Jovial
- 1/2 cup pepperoncini
- 1 cup sliced salami
- 1/3 cup sliced mortadella
- 1 cup sliced pepperoni
- 1 4 oz can sliced black olives drained and rinsed
- 1 cup Persian or English cucumbers diced
- 1 cup halved cherry tomatoes
- 1 green bell pepper diced
- 1/2 red onion diced
- 1/2 cup freshly grated parmesan
- 1 cup cubbed mozzarella or fresh mozzarella
- 1 cup fresh basil torn
- DRESSING
- 1/2 cup olive oil
- 1/3 cup red wine vinegar
- 1 tbsp dried oregano
- 1 tbsp dijon mustard
Cook the pasta according to the package. Drain and poor into a large bowl.
Add in the remaining pasta salad ingredients.
Meanwhile, in a small bowl, whisk together the dressing ingredients. Pour over the pasta salad and toss.
Store covered until ready to serve and enjoy.
