Mediterranean Quinoa Salad on Blue Plate

 I love a good quinoa salad and this one is perfect for the summer time. My mom actually made this quinoa salad a few times when she came to visit and I just love all the flavors combines. So quick and simple, yet delicious. Did I mention both my boys love it as well? So fresh and crisp and that lemon flavor is just AMAZING.

What’s great about this recipe is you can make it ahead of time or make a big batch of it to enjoy over the next couple of days. Just add a squeeze of lemon and olive oil each time you eat it to wake up the flavors.

Mediterranean Quinoa Salad

Course Salad

Ingredients
  

  • 1 cup quinoa
  • 2 cups vegetable broth or preferred broth or water
  • 1 red bell pepper diced
  • 1 roma tomato diced
  • ½ finely diced cucumber
  • ¼ red onion finely diced
  • ¼ cup chopped cilantro
  • 1 lemon juiced add more if you like a more lemony flavor like me
  • A few tablespoons of olive or avocado oil
  • Dash of salt for flavor

Instructions
 

  • n a medium saucepan add quinoa and cook for a few min just to lightly toast the quinoa. Then add your broth and cover and cook until there is no more broth. If the quinoa needs more broth add a bit more. To know when it’s done cooking, it should be fluffy.
  • Pour cooked quinoa in a bowl and allow to cool for about 15 min.
  • Next add all the ingredients and mix well
  • Add more lemon and olive oil if it needs it. I love lots of lemons of I sometimes will do about 1 ½ lemons depending on how much juice I get out of it
