n a medium saucepan add quinoa and cook for a few min just to lightly toast the quinoa. Then add your broth and cover and cook until there is no more broth. If the quinoa needs more broth add a bit more. To know when it’s done cooking, it should be fluffy.
Pour cooked quinoa in a bowl and allow to cool for about 15 min.
Next add all the ingredients and mix well
Add more lemon and olive oil if it needs it. I love lots of lemons of I sometimes will do about 1 ½ lemons depending on how much juice I get out of it
