These Matcha Cashew Butter Cups are so easy to make and requires no baking at all. They’re vegan, gluten-free, and dairy-free and packed with healthy fats and superfoods.

These indulgent vibrant green treats are so simple to make. The outer layer is a creamy mix between coconut oil and cacao butter. Lightly sweeten that up naturally and add in those high-in-antioxidant powders for a smooth silky finish. Cacao butter is amazing. It melts perfectly like butter and is made from cacao. It’s also, plant-based and is what helps make this smooth.

The inside is filled with a creamy raw cashew nut butter (my personal favorite) but you can certainly add any nut butter of choice. I’m telling you, this is taking those peanut butter cups up a whole couple notches if you ask me.

Matcha Benefits?

Matcha has so many healing benefits. It helps promote periodontal health by reducing inflammation, preventing bone resorption, and limiting the growth of certain bacteria associated with periodontal diseases.

Other health benefits include detoxifying effectively and naturally all while being packed with antioxidants. It’s also anti-aging, supports the immune system, and prevents cardiovascular diseases. Matcha also prevents liver disease, diabetes, Alzheimer’s, arthritis, cold & flu, lower stress, and cancer.

Side note: THIS is my absolute favorite matcha and highly recommend it.

You get a good hint of the delicious matcha throughout each bite but it’s not over-powering what-so-ever.

Moringa Powder

Moringa oleifera is a plant that is often called the drumstick tree, the miracle tree, the ben oil tree, or the horseradish tree. It’s known to have many health benefits as well as be antifungal, antidepressant, antibacterial, and anti-inflammatory properties. Moringa is packed with vitamin A, vitamin B1 (thiamin), iron, calcium, zinc, B3, B2, and so much more.

I discovered this superfood a few months ago when I noticed the ingredient in one of my favorite power bars I buy at Whole Foods. I was intrigued and found the powder HERE at Thrive Market. You can definitely leave this powder out and just use matcha, but if you wanted to really make this something spectacular, I would include it.

Matcha Cashew Butter Cups

Matcha Cashew Butter Cups

Vegan, Dairy-Free, and gluten-free.

Ingredients
  

  • 1/2 cup coconut oil
  • 1/2 cup coconut cream
  • 1/2 cup cacao butter
  • 2 tsp matcha
  • 1 tsp moringa powder optional
  • 3 1/2 tbsp maple syrup
  • pinch of salt
  • Filling
  • 1/2 cup cashew butter or any nut butter of choice
  • 1/3 cup coconut oil

Instructions
 

  • In a small saucepan, heat up the coconut oil, coconut cream, cacao butter, maple syrup, and salt until cacao butter has melted. About 5 minutes. DO NOT BOIL. Just warm up and melt.
  • Turn off the heat and add the matcha and moringa powder and whisk very well.
  • In silicone muffin liners, pour about 1-2 tbsp of the liquid in each cup and freeze for about 25 minutes.
  • To do the filling: While the first layer is in freezer, melt the coconut oil and cashew butter. Set aside.
  • Remove pan from the freezer, and scoop 1/2 tsp of peanut butter filling into each muffin tin. Place back in the freezer for another 15-20 minutes.
  • Remove from the freezer and pour the remaining liquid and freeze for another 20 minutes.
