This Gluten-Free Lemon Zucchini Pasta is the perfect summer recipe. It’s quick, simple, and easy to make. This gluten-free pasta is sure to be a crowd-pleaser.

It’s zucchini season which is an amazing season because there are so many recipes you can do to include this delicious summer vegetable. There is something about summertime where all the fresh fruits and veggies are out and the recipes are endless. Zucchini is just one of those endless recipe creations…

I had some leftover zucchini in my fridge from another recipe as I working on and needed a quick lunch for the boys and I. My boys love when I make them a lemon garlic pasta. It’s one of their favorites. But this time, I wanted to include zucchini and add some fresh herbs to brighten it all up. As suspected…We devoured the whole thing.

I wanted to make this pasta vegan but there was another part of me that said…”It needs feta cheese.” I am so glad I had some because this added that salty tang. You can definitely use goat cheese or even parmesan cheese if you prefer it or feel free to omit the cheese and use vegan butter instead of ghee to keep it vegan.

Let’s chat food freedom for a sec…I personally, allow myself to have food freedom and not deprive myself of foods I enjoy. I eat clean for 80% of the time. But allowing myself to just enjoy all the things 20% of the time allows me to be satisfied and happy with what I eat and not feel guilty for eating it. So, if you don’t have an allergy, I hope you allow yourself a bit of food freedom as well.

Gluten-Free Lemon Zucchini Pasta

The perfect summer pasta using ingredients that are in season and gluten-free

Cook Time 20 minutes

Ingredients
  

  • 1 box of gluten-free pasta I like Jovial
  • 1 zucchini sliced lengthwise and then cute again (they should look like moons)
  • 1 lemon zested and 1/2 the lemon juice
  • 2 tbsp ghee
  • 2 tbsp avocado oil
  • 1 tbsp fresh chopped basil
  • 1/2 tbsp fresh chopped mint
  • 1.2 tbsp fresh chopped parsley
  • 1 shallot minced
  • 1 garlic clove minced
  • 1/4 cup crumbled feta cheese
  • salt and pepper to taste

Instructions
 

  • In a medium pot, cook the pasta according to the package
  • In a large skillet, add 1 tbsp of avocado oil, shallot, and garlic. Cook for about 2 minutes.
  • Add the zucchini and another tbsp of the avocado oil and cook for about 5 minutes. You don’t want them soggy. Add a little salt and pepper to taste.
  • Drain the cooked pasta and add to the skillet with the zucchini. Add the lemon zest, lemon juice, ghee, and a bit more salt and pepper for flavor.
  • Turn off the heat and add the herbs and fresh crumbled feta.
  • Serve and enjoy!
