Weekends are for eating all the yummy things. We had a huge craving for french toast and with my youngest being allergic to eggs, it was hard to create something that tasted and had the texture like regular french toast. But guess what? I made that happen with these delicious Cereal Crusted French Toast with Caramelized Bananas.

There is this plant-based egg product called Just Egg, which is liquidy but slightly thick like a scrambled egg and this is the magic for that egg replacement. You can find it in the refrigerated section at most grocery stores. It’s a great option. If you prefer to use eggs, I would use two whole eggs.

Now, for the incredible loaded flavor. In true Natalie form, I had to take basic french toast up a notch. There was this restaurant in Dallas that had these fruity pebble crusted french toast and let me tell you, I ordered them often. I wanted to create the same EXACT ones but couldn’t find any more fruity pebbles at the store I was at. #quarantinelife. When I saw corn flakes, I thought that would give these a great crunch and they absolutely did.

Let’s talk about the toppings. Caramelized bananas really take this to the next level. Pair that with some fresh toasted walnuts and almond butter and you have yourself a hearty tasty breakfast. Don’t be intimidated with making the caramelized bananas, they’re so easy and fool-proof.

Cereal Crusted French Toast (Gluten-Free, Vegan, Dairy-Free)

These cereal crusted french toasts is vegan, gluten-free, dairy-free, and vegan

Ingredients
  

  • 1 loaf of gluten-free vegan bread
  • 1/4 cup Just Egg plant-based eggs or 2 large eggs
  • 1 cup almond milk
  • 1 tbsp ground cinnamon
  • 1/2 cup cassava flour
  • 1 1/4 cups organic corn flakes
  • coconut oil for greasing the skillet
  • 3 bananas sliced at a diagonal
  • 1/2 cup rough chopped walnuts
  • Almond Butter for drizzle
  • Maple syrup

Instructions
 

  • In a ziplock, add the corn flakes and let out the air and zip tight. With a mallet or rolling pin, smash the cereal until roughly chopped. Pour into a large wide bowl and add the cassava flour, and cinnamon.
  • In another wide bowl, add the plant-based eggs and almond milk and whisk up.
  • Heat up a skillet and add coconut oil
  • Soak the bread into the milk/egg mixture for at least 20 seconds then dip it into the cereal mixture and add the french toast one by one. Cook both sides for about 3 minutes per side.
  • Meanwhile, in another skillet, add about 1 tbsp coconut oil to melt and toast the walnuts for a few minutes and remove to a small bowl.
  • In the same skillet as the cooked walnuts, add more coconut oil.
  • Add the sliced bananas and cook on medium to low heat for about 4 minutes per side or until caramelized.
  • Top the french toast with the sliced bananas, toasted walnuts, drizzle of almond butter, maple syrup, and enjoy!
