Kale and Peach Caprese Salad
Summertime peaches are the best! This Kale and Peach Caprese Salad are refreshingly perfect. Give it a try, it won't disappoint. Plus, it's gluten-free.

- 4 cups kale chopped
- 2 peaches diced
- 1/2 cup sliced strawberries
- 1/2 cup sliced cherry tomatoes
- 1/2 cup sliced almonds
- 1 avocado diced
- 1 cup organic mini mozzarella balls
- 1/2 cup chopped basil
- 1/3 cup chopped mint
- 2 tbsp olive oil
- 1/2 lemon juiced
- salt and pepper to taste
- drizzle of balsamic glaze
In a large bowl, add the kale olive oil, lemon juice, salt, and pepper. Massage well with your hands.
Next add in the remaining ingredients EXCEPT the balsamic glaze and toss well.
Plate the salad and drizzle a little balsamic glaze and enjoy!
