Greek Meatballs with Lemon Pasta

Ingredients
  

  • Greek Meatballs
  • 1 lb ground chicken
  • 1 lemon zested
  • 2 garlic cloves chopped
  • 1 shallot chopped
  • 1 tbsp oregano chopped
  • 1 tbsp parsley chopped
  • 1/2 tbsp mint chopped
  • 4 tbsp feta crumbled
  • salt and pepper to taste
  • 4 tbsp olive oil
  • Lemon Pasta
  • 1 Box gluten-free pasta I like Jovial
  • 3 tbsp melted ghee
  • 1/2 lemon juiced
  • salt and pepper to taste
  • 1/2 tsp ground garlic
  • Fresh parsley mint, oregano to taste

Method
 

  1. Greek Meatballs
  2. Heat a cast-iron skillet, and add some olive oil.
  3. In a large bowl, add all ingredients and mix with your hands.
  4. Form balls and add them to the skillet. Cook for a total of about 7 minutes flipping them every 2-3 minutes per side.
  5. Lemon Pasta
  6. Cook pasta according to the package.
  7. Once cooked and al dente, drain the pasta and add the remaining ingredients.
  8. Plate the pasta, meatballs, and choice of veggie and squeeze a dash more of lemon, add some more herbs, and crumbled feta.
