Is there anything better on a cold winter day than having a comforting pot roast dinner? Growing up, my grandmother and my mom would make this dish all the time. It was so flavorful. The secret to my grandma’s recipe is two things: one, she puts garlic cloves inside the meat, and two, the seasoning is a package of onion soup mix. Can we talk FLAVOR?!

Ingredients

  • grass-fed chuck roast
  • a packet of organic onion soup mix
  • carrots
  • potatoes
  • green beans
  • onions
  • beef broth
  • salt and pepper
  • bay leaf
  • garlic
  • garlic powder

Cooking Methods

There are two ways I like to cook this dish. You can do it in a large pot and then roast it in the oven at 275 for 4 hours OR you can start by searing it all in a pot then add it all into a crockpot and cooking on low for 4 hours.

Ingredients
  

  • 5-6 lb grass-fed chuck roast
  • 5-6 cups beef broth
  • 1 packet gluten-free onion soup mix
  • 1 lb green beans
  • 4 russet potatoes peeled and cubed in large chucks
  • 8 carrots peeled and halved
  • 1 yellow onion sliced
  • 1 bay leaf
  • 8 garlic cloves
  • 2 tbsp garlic powder
  • salt and pepper to taste
  • avocado oil for searing

Instructions
 

  • Preheat oven to 275
  • Using a sharp knife, poke 8 holes in the meat and then stuff those holes with each garlic clove.
  • Then, season the meat generously with salt, pepper, and garlic powder.
  • In a large dutch oven or pot that is oven safe, add some avocao oil and heat the pot on medium.
  • Once it’s hot, add the meat and sear all the sides of the meat for about 5 minutes per side.
  • Once it’s seared, remove the meat and add the broth. Scrape the brown bites with a wooden spoon.
  • (if using a crockpot method, after scarping the brown bites with the broth, add the broth in the crockpot and follow reamining steps).
  • Add in the onion soup mix, salt, and pepper, onion, potatoes, carrots, green beans, and then add the meat back in.
  • Cover anad cook on low for about 4 hours.
  • Remove the meat, shred it with a fork and add it back into the broth.
  • Serve and enjoy!
