Ingredients
  

  • 4 wild-caught salmon fillets
  • 3 tbsp olive oil
  • 1 ½ tbsp ground sumac
  • 8 sprigs of fresh thyme
  • 1 cup pitted mixed olives I did kalamata and green
  • 1 lemon sliced and a few quartered into small triangles
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 400°
  • In a large baking dish, add the salmon.
  • Then drizzle with olive oil, salt, pepper, sumac, lemon slices, olives, little lemon triangles, and thyme.
  • Roast for about 20 minutes and serve.
