- 4 wild-caught salmon fillets
- 3 tbsp olive oil
- 1 ½ tbsp ground sumac
- 8 sprigs of fresh thyme
- 1 cup pitted mixed olives I did kalamata and green
- 1 lemon sliced and a few quartered into small triangles
- salt and pepper to taste
Preheat oven to 400°
In a large baking dish, add the salmon.
Then drizzle with olive oil, salt, pepper, sumac, lemon slices, olives, little lemon triangles, and thyme.
Roast for about 20 minutes and serve.
