Ingredients
  

  • 4 wild-caught salmon fillets
  • 3 tbsp olive oil
  • 1 ½ tbsp ground sumac
  • 8 sprigs of fresh thyme
  • 1 cup pitted mixed olives I did kalamata and green
  • 1 lemon sliced and a few quartered into small triangles
  • salt and pepper to taste

Method
 

  1. Preheat oven to 400°
  2. In a large baking dish, add the salmon.
  3. Then drizzle with olive oil, salt, pepper, sumac, lemon slices, olives, little lemon triangles, and thyme.
  4. Roast for about 20 minutes and serve.
