  • olive oil
  • onions
  • garlic
  • bell pepper
  • oregano
  • cumin
  • paprika
  • chili powder
  • diced tomatoes
  • chicken broth
  • corn
  • shredded chicken
  • dairy-free cream cheese. I like Miyoko’s
  • white beans
  • diced green chilies
  • cilantro
  • scallions
  • dairy-free yogurt or sour cream

Ingredients
  

  • 2 tbsp olive oil
  • 1 onion minced
  • 4 garlic cloves minced
  • 2 green bell peppers diced
  • 1 tsp dried oregano
  • 2 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp chili powder
  • salt and pepper to taste
  • 1 14 oz can diced tomatoes
  • 1/2 cup frozen corn
  • 4 cups chicken broth
  • 4-5 cups shredded chicken
  • 4 oz dairy-free cream cheese. I like Miyokos
  • 1 can white beans drained and rinsed
  • 2 4 oz cans diced mild green chilies
  • TOPPINGS
  • cilantro
  • scallions
  • dairy-free yogurt or sour cream

Instructions
 

  • In a large pot, add the olive oil and onions. saute for about 5 minutes.
  • Then add in the garlic, bell peppers, oregano, cumin, paprika, chili powder, salt, and pepper. Cook for another 4 minutes.
  • Next, add in the broth, diced tomatoes, green chilis, cream cheese, corn, beans, chicken. Season with more salt and pepper. Cover and cook for about 20 minutes.
  • Serve with cilantro, scallions, yogurt or sour cream, and enjoy!
