- 2 tbsp olive oil
- 1 onion minced
- 4 garlic cloves minced
- 2 green bell peppers diced
- 1 tsp dried oregano
- 2 tsp ground cumin
- 1 tsp paprika
- 1 tsp chili powder
- salt and pepper to taste
- 1 14 oz can diced tomatoes
- 1/2 cup frozen corn
- 4 cups chicken broth
- 4-5 cups shredded chicken
- 4 oz dairy-free cream cheese. I like Miyokos
- 1 can white beans drained and rinsed
- 2 4 oz cans diced mild green chilies
- TOPPINGS
- cilantro
- scallions
- dairy-free yogurt or sour cream
In a large pot, add the olive oil and onions. saute for about 5 minutes.
Then add in the garlic, bell peppers, oregano, cumin, paprika, chili powder, salt, and pepper. Cook for another 4 minutes.
Next, add in the broth, diced tomatoes, green chilis, cream cheese, corn, beans, chicken. Season with more salt and pepper. Cover and cook for about 20 minutes.
Serve with cilantro, scallions, yogurt or sour cream, and enjoy!
