Creamy White Chicken Chili
Ingredients
- 2 tbsp olive oil
- 1 onion minced
- 4 garlic cloves minced
- 2 green bell peppers diced
- 1 tsp dried oregano
- 2 tsp ground cumin
- 1 tsp paprika
- 1 tsp chili powder
- salt and pepper to taste
- 1 14 oz can diced tomatoes
- 1/2 cup frozen corn
- 4 cups chicken broth
- 4-5 cups shredded chicken
- 4 oz dairy-free cream cheese. I like Miyokos
- 1 can white beans drained and rinsed
- 2 4 oz cans diced mild green chilies
- TOPPINGS
- cilantro
- scallions
- dairy-free yogurt or sour cream
Instructions
- In a large pot, add the olive oil and onions. saute for about 5 minutes.
- Then add in the garlic, bell peppers, oregano, cumin, paprika, chili powder, salt, and pepper. Cook for another 4 minutes.
- Next, add in the broth, diced tomatoes, green chilis, cream cheese, corn, beans, chicken. Season with more salt and pepper. Cover and cook for about 20 minutes.
- Serve with cilantro, scallions, yogurt or sour cream, and enjoy!
