It’s a rainy day here in Dallas and we also just got back from a week-long vacation with the kid so a nourishing soup to detox is what our bodies were craving. Let me just tell you, this quickly jumped up to being one of my favorite soups. We sure needed it after eating our way through theme parks all week.

It’s completely gluten-free, dairy-free, and whole 30. So what makes this soup detoxifying? A few key ingredients I love such as dandelion, turmeric, cabbage, and cilantro. All of these are great for detoxing the liver and cleansing the soul.

Give this soup a try! I’m telling you, it’s the best soup to make anytime and anywhere but especially after traveling and eating out a lot.

Detoxing Cabbage and Dandelion Soup

Here’s what you need:

  • Vegetable or chicken broth
  • cabbage
  • Dandelion (it’s a type of lettuce usually found near the kale in the produce section)
  • Cilantro
  • diced tomatoes
  • carrots
  • celery
  • onion
  • potatoes (optional)
  • chicken
  • turmeric
  • cumin
  • lemon
  • Salt and pepper to taste

Ingredients
  

  • 8 cups of vegetable or chicken broth
  • 3 cups shredded green cabbage
  • ½ bunch dandelion greens chopped (it’s a type of lettuce usually found near the kale in the produce section)
  • cup cilantro chopped
  • 14 ounce can diced tomatoes
  • 4 carrots diced
  • 4 celery sticks diced
  • 1 yellow onion diced
  • cups yukon potatoes diced optional)
  • 2 cooked chicken breasts diced or shredded
  • ½ tsp ground turmeric
  • 1 tsp ground cumin
  • 1 ½ lemons juiced
  • 2 tbsp avocado oil
  • Salt and pepper to taste

Instructions
 

  • In a large stockpot, add the avocado oil. Then, add in the onions, carrots, celery, and potatoes. Season with salt and pepper for about 6-7 minutes.
  • Next, add in the vegetable broth, diced tomatoes, turmeric, cumin, and lemon juice. Cover and cook for about 20 minutes.
  • Open the lid and add in the dandelion, cabbage, cooked diced or shredded chicken, and cilantro and cover and cook for another 5-7 minutes.
  • Adjust seasoning as needed, serve, and enjoy.
