Breakfast is my favorite meal of the day and these Blueberry Lemon Poppy Seed Baked Oats are the perfect way to enjoy the flavors of Spring and Summer. They’re bright and poppy and super simple to prep in advance to enjoy for breakfast all week long or for a delicious weekend brunch.
The key to balancing your blood sugar when eating oats is to include protein to regulate things. I added protein powder and chia seeds. Here are some other ingredients to include.
Ingredients
- rolled oats: be sure it’s gluten-free and glyphosate free
- cinnamon
- lemon juice
- lemon zest
- chia seeds
- protein powder: neutral flavor or vanilla
- vanilla extract
- almond extract
- poppy seeds
- salt
- baking powder
- almond milk or any milk of choice
- blueberries

Blueberry Lemon Poppyseed Baked Oats
Ingredients
- 2 ¼ cups rolled oats
- 2 cups nut milk of choice
- 1 lemon zested
- 3 lemons juiced
- 1 cup organic blueberries
- 1/3 cup maple syrup
- 1 scoop vanilla protein powder
- 1/4 cup chia seeds
- 1 tbsp ground flax plus 2 tbsp water flax egg
- 1 tbsp cinnamon
- 4 tbsp poppy seeds
- 1/2 tsp salt
- 1 tsp baking powder
Instructions
- Preheat oven to 350°
- In a small bowl, make the flax egg by whisking together the ground flax and water and set aside.
- In a large bowl, add the remaining ingredients and the flax egg.
- In a 9×11 baking dish lined with parchment paper, spread the mixture evenly.
- Bake for 40 minutes.
- Cut and serve and enjoy.
