Is there anything better than making something that could be for either a snack or dessert? These Cashew Butter Birthday Cake Balls are perfect for meal prep lunchbox snack or late night sweet tooth craving. They’re gluten-free, grain-free, and can be modified vegan.

Cake balls are one of my favorite homemade healthy snacks because they’re packed with so much protein, fiber, and omega-3. They’re the perfect bite-size snack that can also be a dessert for those sweet tooth cravings. Plus, they’re so fun for kids. I like to use dye-free sprinkles such as THESE.

I always feel so good and satisfying when I serve these sweet yet healthy treats to my boys. For starters, they’re homemade so I know exactly what goes into them. But also, They can be adapted based on any nut allergies or food diets.

Ingredient Alterations

  • If cashew butter isn’t your jam, use any nut butter of choice.
  • You can also sub sun butter if your school or child has any nut restrictions/allergies.
  • If vegan, omit the honey and use maple syrup or even date syrup.
  • You can blend all the ingredients EXCEPT the sprinkles, into a food processor and add in the sprinkles after to mix by hand if you wanted.
  • Not a fan of sprinkles, add coconut shreds or chocolate chips. Bett yet, add some cacao nibs. YUM!

Prep these ahead of time and store half the batch in the fridge and the other half in the freezer. I love to store a batch in the freezer for when my kids are really hungry and won’t stop snacking. They’re also perfect for lunchboxes. I grab from the freezer stash and place them into the lunchboxes and by the time lunch starts, they’re ready to eat. The boys love them. The other idea would be to serve them to your kiddos as an afterschool snack alongside some fruit or something.

These Birthday Cake Balls are so simple to make using a few simple ingredients. Roll them, pop them in the fridge or freezer, enjoy!

Ingredients
  

  • 1.5 cups almond flour
  • 1/2 cup cashew butter
  • 1/3 cup raw honey
  • 1/4 cup hemp seeds
  • 1/4 cup ground flax seeds
  • 1/4 tsp almond extract
  • 3/4 tsp vanilla extract
  • 3 tbsp sprinkles plus more for rolling

Instructions
 

  • In a bowl add all the ingredients and mix with a rubber spatula.
  • Using your hands, roll them into even balls then roll them into a bowl of sprinkles.
  • Pop them in the fridge or freezer and enjoy.
