Vegan Blueberry Lavender Energy Bites in Bowl

I love energy bites. Making different variations of them are so fun. You can literally use anything you have in your fridge to create something so delicious. Don’t like cashews, use any nut butter of choice. You can even add chocolate chips, dried cranberries, or something festive like pumpkin spice in the Fall. The possibilities are endless.

For these bites, I decided to use my favorite herb (lavender), and some blueberries. Blueberries are packed with antioxidants and since they are in season, I am using every last bit of them as possible. Nothing like seasonal fruits to make what you’re eating extra special.

So simple and healthy to make using just 8 simple ingredients. You can make a huge batch to store in the freezer and pull them out as needed or put them in school lunch boxes to thaw. My boys really enjoy them and hope you do as well.

Vegan Blueberry Lavender Energy Bites

Quick and easy blueberry lavender energy bites made with 8 simple ingredients. Perfect for snacking and school lunches. They are vegan and gluten free and oh-so delicious

Ingredients
  

  • 1 1/2 cup rolled oats
  • 1 scoop collagen optional
  • 1/2 tsp dried lavender
  • 6 -7 dates pitted
  • 1/2 cup blueberries
  • 1/4 cup hemp seeds
  • 2 tbsp cashews
  • 1/2 cup cashew butter

Instructions
 

  • In a food processor add the oats and blend for just a 10-15 few seconds just to break up the oats a bit so it’s somewhat course.
  • Add all remaining ingredients and blend until it starts to form into a sticky ball
  • With a small melon scooper, scoop out the mixture and roll into balls
  • Place in fridge for at 30 min to set.
  • Enjoy!
  • Note: You can freeze them and take them out in the morning to place in kids lunch boxes.
