I love a good tasty power bowl and this one has all the right flavors combined. It’s filled with vitamins, nutrients, fiber, healthy fats and so much more.

This bowl has a combination of fresh veggies that I roasted up along with some black beans for that extra protein and fiber. Feel free to use any protein of choice or any beans you prefer. Season up the veggies nice and good and then roast to perfection.

You have noticed this romesco sauce from my delicious Romesco Chickpeas with Lemony Potatoes and Spinach. This sauce is so good and so versatile that you can whip up a batch and enjoy it over eggs, in a sandwich, or topped over your favorite bowl of veggies and protein.

I wanted to brighten up this beautiful bowl by adding a citrusy avocado sauce right on top. It’s a great way to add in some healthy fats and get an instant citrus fresh flavor. I used This Mini Food Processor to blend both this sauce and the romesco sauce. If you love avocado and lime, this will be a higher hit. Plus, again, you can make a batch and use it on just about anything. Sooo good!

Additional Toppings

Let’s just say I had a tasty lunch the next couple of days after making this meal using leftovers and added some amazing tasty toppings that I wanted to share.

  • Sauerkraut: I used raw and fermented sauerkraut to help with digestion and it’s truly one of the best kinds to use and eat. I added a touch of this on top of my bowl and it gave this amazing pickled zing. Loved it.
  • Radishes: I’m a sucker for radishes on just about everything I eat. It’s a very cleansing veggie and tastes great in here.
  • Tomatoes: I had some leftover cherry tomatoes and decided to add that right on top. It was good.
  • Hummus: oh the hummus (my favorite)! Probably one of the items I’ll be adding to the dish. I recommend scooping this onto the bowl or plate first, then add your veggies, and topping it with the romesco and avocado sauce. Perfection!

Veggie Power Bowl with Avocado Sauce

This is a delicious Veggie Power Bowl with an avocado and romesco sauce. It's easy to make and packed with healthy fats, fiber, and protein.

Ingredients
  

  • 2 small heads of broccoli chopped
  • 1 can black beans drained and rinsed
  • 1 red onion chopped
  • 1 bell pepper chopped
  • 1 lb yellow potatoes cubed
  • 1.5 tsp onion pepper
  • salt and pepper to taste
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 1/2 tsp dried thyme
  • 2 tbsp olive oil
  • Toppings: fermented sauerkraut a scoop of hummus, sliced radishes, diced tomatoes, romesco sauce (recipe below), avocado sauce (recipe below)
  • Romesco Sauce
  • 14 oz jar roasted bell pepper
  • 3 garlic cloves
  • 4 tbsp olive oil plus 2.5 tbsp for potatoes
  • 4 tbsp lemon juice
  • 3 tbsp parsley
  • 1 tbsp oregano
  • 1/4 cup slivered almonds
  • 4 tbsp grated vegan parmesan cheese
  • salt and pepper to taste
  • Avocado Sauce
  • 1 small avocado
  • 1 lime
  • handful of cilantro
  • 1/2 cucumber diced
  • about 1/4 cup filtered water add a little at a time until it gives you a nice consistency
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 400°
  • On a baking sheet lined with parchment paper, add broccoli, potatoes, onions, and bell pepper. Then add the olive oil, salt, pepper, paprika, turmeric, and onion powder. Roast in the oven for about 20-25 minutes.
  • To make the romesco sauce, add all the romesco ingredients into a mini food processor or blender and blend until smooth. Set aside.
  • To make the avocado sauce, add all the ingredients into a mini food processor or blender and blend until smooth.
  • To assemble, add a scoop of romesco sauce on the bottom, top with the veggies and black beans, and drizzle with the avocado sauce.
  • I like to mix up the toppings depending on what I have on hand. I like to include a scoop of hummus, sauerkraut, radishes, and tomatoes.
  • Serve and enjoy!
