Preheat oven to 400°
On a baking sheet lined with parchment paper, add broccoli, potatoes, onions, and bell pepper. Then add the olive oil, salt, pepper, paprika, turmeric, and onion powder. Roast in the oven for about 20-25 minutes.
To make the romesco sauce, add all the romesco ingredients into a mini food processor or blender and blend until smooth. Set aside.
To make the avocado sauce, add all the ingredients into a mini food processor or blender and blend until smooth.
To assemble, add a scoop of romesco sauce on the bottom, top with the veggies and black beans, and drizzle with the avocado sauce.
I like to mix up the toppings depending on what I have on hand. I like to include a scoop of hummus, sauerkraut, radishes, and tomatoes.
