Vegan Blueberry Lavender Energy Bites
Quick and easy blueberry lavender energy bites made with 8 simple ingredients. Perfect for snacking and school lunches. They are vegan and gluten free and oh-so delicious

- 1 1/2 cup rolled oats
- 1 scoop collagen optional
- 1/2 tsp dried lavender
- 6 -7 dates pitted
- 1/2 cup blueberries
- 1/4 cup hemp seeds
- 2 tbsp cashews
- 1/2 cup cashew butter
In a food processor add the oats and blend for just a 10-15 few seconds just to break up the oats a bit so it's somewhat course.
Add all remaining ingredients and blend until it starts to form into a sticky ball
With a small melon scooper, scoop out the mixture and roll into balls
Place in fridge for at 30 min to set.

Note: You can freeze them and take them out in the morning to place in kids lunch boxes.
