Sometimes, I truly just crave some loaded nachos. I mean, who doesn’t right?! Anytime I’m at a game or concert, nachos it is. Since I’m trying to incorporate more plant-based plant-centric meals into my daily diet, this recipe knocks it out of the park.

What is Jackfruit?

This was my first time cooking with jackfruit and you know what?! It’s not so bad. I found some at Whole Foods that came already shredded which was perfect, but they also sell them in a can.

For those unaware of what jackfruit is, it’s a relative of figs and breadfruit that grows in tropical areas. While it is technically a fruit, its consistency is similar to that of chicken or pork. It has a neutral taste when young, so it takes on the flavor of whatever sauce or seasoning you pair it with. 

I chose BBQ as the sauce of choice and it turned out amazing. In fact, it was so good, my hubby didn’t even know it was vegan until part-way through dinner (yes, we had nachos for dinner).

Ingredients and Substitutes

  • Jackfruit- if you can’t find jackfruit or don’t prefer it, I recommend finely sliced mushrooms. 
  • Mushrooms
  • Cilantro
  • BBQ Sauce
  • Bell Pepper
  • Tomatoes
  • Red onions 
  • Vegan sour cream
  • Vegan queso
  • Guac
  • Pepperoncini 
  • Black beans

Ingredients
  

  • 1 pack of Upton’s Shredded Jackfruit
  • 1.5 cup sliced mushrooms
  • 1/2 can of black beans
  • 1/3 cup bbq sauce
  • 1/2 bell pepper diced
  • 1 cup cherry tomatoes halved
  • 3 tbsp chopped cilantro
  • 1/3 cup chopped red onions
  • 2 tbsp bbq sauce for topping
  • 2 tbsp olive oil
  • 1 bag of tortilla chips
  • Additional Toppings: vegan sour cream salsa, jalapeno, pepperoncini, vegan queso

Instructions
 

  • Preheat oven to 350
  • In a skillet, add olive oil, mushrooms, and jackfruit. Saute for about 5-7 minutes. Add in the BBQ sauce and cook for another couple of minutes.
  • In a cast-iron skillet or baking sheet, add the tortilla chips and bake in the oven for about 5-6 minutes until warm.
  • Remove and top the chips with the mushroom jackfruit mixture, black beans, bell pepper, tomatoes, onions, cilantro, guac, salsa, sour cream, queso, a little more bbq sauce, and any other toppings you desire.
  • Serve and enjoy!
