Vegan BBQ Jackfruit Nachos

- 1 pack of Upton's Shredded Jackfruit
- 1.5 cup sliced mushrooms
- 1/2 can of black beans
- 1/3 cup bbq sauce
- 1/2 bell pepper diced
- 1 cup cherry tomatoes halved
- 3 tbsp chopped cilantro
- 1/3 cup chopped red onions
- 2 tbsp bbq sauce for topping
- 2 tbsp olive oil
- 1 bag of tortilla chips
- Additional Toppings: vegan sour cream salsa, jalapeno, pepperoncini, vegan queso
Preheat oven to 350
In a skillet, add olive oil, mushrooms, and jackfruit. Saute for about 5-7 minutes. Add in the BBQ sauce and cook for another couple of minutes.
In a cast-iron skillet or baking sheet, add the tortilla chips and bake in the oven for about 5-6 minutes until warm.
Remove and top the chips with the mushroom jackfruit mixture, black beans, bell pepper, tomatoes, onions, cilantro, guac, salsa, sour cream, queso, a little more bbq sauce, and any other toppings you desire.
Serve and enjoy!
