Here’s a little tasty healthy appetizer to serve for your upcoming holiday function. These Sweet & Savory Sweet Potato Bites are just that. Now, we know that indulging during the holidays is nice and I am in no way against that. But having a little something healthy to offer up for your guests and yourself is nice too (because it’s all about balance right)?

I wanted to create something healthy but also dairy-free since I know there are so many people now who are either gluten-free or dairy-free and it’s always nice to have some options for them besides chips and guac. These are bite-size sweet potatoes packed with flavor with each bite. You got that crunch from the walnuts, the sweetness from the honey and dried cranberries, and that warm flavor from the rosemary. It’s perfection in a bite.

Don’t want to make this dairy-free, I would highly suggest goat cheese as the alternative option. Goat cheese paired with honey is the ultimate dream team in my opinion. Give it a try, or better yet, make them both ways for your holiday function and see how many people gobble them up.

Sweet & Savory Sweet Potato Bites

Festive Holiday Sweet Potato bites will be tasty for any holiday party.

Ingredients
  

  • 2 large sweet potatoes peeled and sliced in thick rounds
  • 1/2 cup Kitehill Ricotta Cheese or any vegan ricotta cheese of choice
  • 1/2 cup walnuts rough chopped
  • 2 tbsp raw unfiltered honey
  • 1/4 cup dried cranberries
  • pinch of salt
  • 1/2 tsp fresh finely chopped rosemary

Instructions
 

  • Preheat oven to 375
  • Line parchment paper with unbleached parchment paper
  • Add the sweet potato rounds and drizzle with olive oil and salt and bake for about 20 min and remove to cool slightly.
  • While potatoes are baking, mix the ricotta with cinnamon and add the mixture into a ziplock bag.
  • Cut the end of ziplock bag and pipe about 1/2 tsp onto each cooked sweet potato
  • Top with walnuts, cranberries and a drizzle of honey.
  • Pop back into the oven for 5 min to heat up.
  • Remove and add a dash of honey.
