Sweet & Savory Sweet Potato Bites
Festive Holiday Sweet Potato bites will be tasty for any holiday party.

- 2 large sweet potatoes peeled and sliced in thick rounds
- 1/2 cup Kitehill Ricotta Cheese or any vegan ricotta cheese of choice
- 1/2 cup walnuts rough chopped
- 2 tbsp raw unfiltered honey
- 1/4 cup dried cranberries
- pinch of salt
- 1/2 tsp fresh finely chopped rosemary
Preheat oven to 375
Line parchment paper with unbleached parchment paper
Add the sweet potato rounds and drizzle with olive oil and salt and bake for about 20 min and remove to cool slightly.
While potatoes are baking, mix the ricotta with cinnamon and add the mixture into a ziplock bag.
Cut the end of ziplock bag and pipe about 1/2 tsp onto each cooked sweet potato
Top with walnuts, cranberries and a drizzle of honey.
Pop back into the oven for 5 min to heat up.
Remove and add a dash of honey.
