Sweet and Spicy Fried Chicken Sandwich (grain-free and gluten-free)

Fried chicken is a weakness for many and this recipe is perfect for those who are gluten-free and grain-free. Perfectly fried in avocado oil leaving these chicken thighs crispy on the outside and tender, juicy, and flavorful on the inside. 

You can eat the chicken right after you fry them or you can smother them in a tasty sweet and spicy sauce. 

After you coat the fried chicken in the sauce, put it in your favorite grain-free bun or lettuce wrap with all the tasty toppings including sliced pickles, lettuce, sliced tomatoes, and your favorite mayonnaise. 

Here’s everything you need!

Ingredients 

  • Chicken thighs
  • Cassava flour
  • Arrowroot flour, can sub corn starch
  • Paprika
  • Garlic Powder
  • Onion powder
  • Honey
  • Hot sauce 
  • Dairy-free milk, can sub for buttermilk 
  • Lemon juice 
  • Ghee or butter, can sub for vegan butter
  • Butter lettuce
  • Grain free, gluten-free burger buns 
  • Mayo (optional)
  • Tomatoes
  • Pickles
  • Butter lettuce 
  • Avocado oil
  • Salt and pepper

To make:

Mix together in a wide large bowl, the arrowroot and cassava flour with the seasonings. Then in another bowl, mix together the milk and lemon juice and more seasonings and let it sit for at least 10 minutes to create the buttermilk. 

Season the chicken. Then add the oil in about a 10-inch non-stick skillet for at least 2-3 minutes.

Dredge the chicken in the buttermilk and then coat it in the flour. Fry them up for about 4-5 minutes per side. While that’s frying up, make the sweet and spicy sauce. Coat the cooked fried chicken in the sauce. 

Build your sandwich with all the tasty toppings, the fried chicken, and devour. You can enjoy this chicken in burger buns, lettuce wrap, or by itself. So damn tasty!!!

Ingredients
  

  • FOR THE CHICKEN
  • 5 chicken thighs boneless and skinless
  • 1 cup Cassava flour
  • 1/2 cup Arrowroot flour can sub corn starch
  • 1 tsp Paprika plus 1/2 tsp for the buttermilk
  • 1 tbsp Garlic powder plus 1 tbsp for the buttermilk
  • 2 tbsp Onion powder plus 1 tbsp for the buttermilk
  • 3/4 cup avocado oil for frying
  • Salt and pepper to taste
  • FOR THE SWEET AND SPICY SAUCE
  • 1/2 cup Honey
  • 3 tbsp Hot sauce
  • 2 tbsp ghee or butter melted
  • DAIRY-FREE BUTTERMILK
  • 1 cup Dairy-free milk can sub for buttermilk
  • 1 tbsp Lemon juice
  • TOPPINGS
  • Butter lettuce
  • Grain free gluten-free burger buns
  • Mayo optional
  • Tomatoes
  • Pickles sliced
  • Butter lettuce
  • Salt and pepper

Instructions
 

  • Mix together in a wide large bowl, the arrowroot and cassava flour with the seasonings icluding some salt and pepper. Then in another bowl, mix together the milk and lemon juice and the remaining buttermilk seasonings and let it sit for at least 10 minutes to create the buttermilk.
  • Next, season the chicken with a little salt and pepper. In about a 10-inch non-stick skillet, heat avoacdo oil for at least 2-3 minutes.
  • Dip the chicken in the buttermilk and then coat it in the flour mixture. Fry them in the avocado oil for about 4-5 minutes per side. Lay the cooked chicken on a wired rack to cool nd sprinkle with a little more salt.
  • While that’s frying up, make the sweet and spicy sauce by mixing all the ingredients in a wide bowl.
  • Lastly, coat the cooked fried chicken in the sauce. Then build your sandwich with all the tasty toppings.
  • Tip…If using buns, I recommend heating some ghee or butter in a skillet and placing the buns cut-side down to lightly toast the inside. You can enjoy this chicken in burger buns, lettuce wrap, or by itself.
