It’s summer time and all the delicious stone fruits are in season. So, what’s a girl to do? Make a delicious and easy summer stone fruit pasta salad.

This dish is so perfect for summer because it’s dinner or lunch that will be ready in under 20 minutes. It’s a great dish to bring to any summer pool party or picnic party. If this is something you’re going to take to a party, just add the spinach right on top and not mix it until ready to serve.

I’ve had this peach tree for many years and this is the first year I have ever gotten peaches that grew and I was overloaded with. Maybe it’s the better quality in the air with everyone being quarantined…whatever it is, I am so happy but needed some ways to use them up. This is where the Summer Stone Fruit Pasta Salad came into play.

The pesto in this dish is seriously one of the best pestos ever. The red wine vinegar with the mix of all herbs really brings this dish home. It tastes fresh with that tiny punch of shallot.

Other fruit options: You can use strawberries, nectarines, cherries, or apricots.

Other options: Fresh mozzarella, feta, or goat cheese would all be great options in here if you are ok with adding dairy. Add in anything that you thing would be great for you and your family, friends, or anyone you’re entertaining.

Summer Stone Fruit Pasta Salad

This summer salad is gluten-free and dairy-free with a refreshing taste of fruit throughout each bite.
Servings 6

Equipment

  • Food Processor

Ingredients
  

  • 1 box jovial pasta
  • 1 1/2 cups spinach
  • 3 peaches sliced
  • 3 plums sliced
  • 1/3 cup cherry tomatoes
  • 1/4 cup garbanzo beans
  • 1 small shallot sliced
  • salt and pepper to taste
  • Pesto
  • 1 cup basil
  • 1 cup mint
  • a few sprigs of thyme
  • 1 small shallot chopped
  • 1/2 cup olive oil
  • 2 tbsp red wine vinegar
  • salt and pepper to taste
  • 1/4 tsp lemon zest

Instructions
 

  • Boil the pasta according to the package.
  • Meanwhile, make the pesto…Add all ingredients into a food processor or blender and blend until smooth.
  • Once pasta is done cooking, rinse under cold water to cool.
  • In a large bowl, add all of the salad ingredients and then the pasta.
  • Mix in the pesto and serve.
