Summer Stone Fruit Pasta Salad

This summer salad is gluten-free and dairy-free with a refreshing taste of fruit throughout each bite.
Servings: 6

Ingredients
  

  • 1 box jovial pasta
  • 1 1/2 cups spinach
  • 3 peaches sliced
  • 3 plums sliced
  • 1/3 cup cherry tomatoes
  • 1/4 cup garbanzo beans
  • 1 small shallot sliced
  • salt and pepper to taste
  • Pesto
  • 1 cup basil
  • 1 cup mint
  • a few sprigs of thyme
  • 1 small shallot chopped
  • 1/2 cup olive oil
  • 2 tbsp red wine vinegar
  • salt and pepper to taste
  • 1/4 tsp lemon zest

Equipment

  • Food Processor

Method
 

  1. Boil the pasta according to the package.
  2. Meanwhile, make the pesto...Add all ingredients into a food processor or blender and blend until smooth.
  3. Once pasta is done cooking, rinse under cold water to cool.
  4. In a large bowl, add all of the salad ingredients and then the pasta.
  5. Mix in the pesto and serve.
