Summer Stone Fruit Pasta Salad
This summer salad is gluten-free and dairy-free with a refreshing taste of fruit throughout each bite.
- 1 box jovial pasta
- 1 1/2 cups spinach
- 3 peaches sliced
- 3 plums sliced
- 1/3 cup cherry tomatoes
- 1/4 cup garbanzo beans
- 1 small shallot sliced
- salt and pepper to taste
- Pesto
- 1 cup basil
- 1 cup mint
- a few sprigs of thyme
- 1 small shallot chopped
- 1/2 cup olive oil
- 2 tbsp red wine vinegar
- salt and pepper to taste
- 1/4 tsp lemon zest
Boil the pasta according to the package.
Meanwhile, make the pesto...Add all ingredients into a food processor or blender and blend until smooth.
Once pasta is done cooking, rinse under cold water to cool.
In a large bowl, add all of the salad ingredients and then the pasta.
Mix in the pesto and serve.
