Asparagus…a delicious Spring veggie that is absolutely amazing. What I love most about asparagus is that they cook up so quick and can be dressed or seasoned any way you prefer. I like to steam, blanch, roast, or even sauté them up.

Roasted Asparagus with Vegan Parmesan Cheese

Was totally craving a good side dish last week and wanted to use up some Asparagus I had gotten from the market the other day. My boys love when veggies are roasted so that was my preferred method for this dish. I wanted a mild onion crunch and flavor to this, so I sliced up some shallot and added it right on top. Once it’s cooked, top it with fresh vegan parmesan cheese and some fresh dill.

Nor for the seasoning…Olive oil and lemon baby. Doesn’t get any simpler that that. I grated some lemon zest right on top with the oil and seasonings. Make sure you mix it up good. Slice the lemon right after and add them right on top of the asparagus. Roast and top with some tasty vegan parmesan cheese from Violife. It tastes great.

Simple, easy, and made with minimal ingredients. Compliments you main dish very well.

Roasted Asparagus with Vegan Parmesan

A gluten-free vegan side dish that will knock your socks off. Easy and made with minimal ingredients.

Ingredients
  

  • 1 bunch asparagus trimmed
  • 1 tbsp olive oil
  • salt and pepper
  • 1 lemon zested, and sliced
  • 1 shallot sliced
  • 1-2 tbsp grated vegan parmesan cheese
  • Fresh dill and flaky sea salt for finishing/topping

Instructions
 

  • Preheat oven to 375°
  • On a baking sheet lined with parchment paper, add the asparagus, olive oil, shallots, lemon zest, salt, and pepper. Mix well with your hands.
  • Add the sliced lemon right on top and bake for about 12 minutes.
  • Take them out of the oven and top with grated vegan parmesan cheese, flaky sea salt, and dill.
  • Serve and enjoy!
