Roasted Asparagus with Vegan Parmesan
A gluten-free vegan side dish that will knock your socks off. Easy and made with minimal ingredients.

- 1 bunch asparagus trimmed
- 1 tbsp olive oil
- salt and pepper
- 1 lemon zested, and sliced
- 1 shallot sliced
- 1-2 tbsp grated vegan parmesan cheese
- Fresh dill and flaky sea salt for finishing/topping
Preheat oven to 375°
On a baking sheet lined with parchment paper, add the asparagus, olive oil, shallots, lemon zest, salt, and pepper. Mix well with your hands.
Add the sliced lemon right on top and bake for about 12 minutes.
Take them out of the oven and top with grated vegan parmesan cheese, flaky sea salt, and dill.
Serve and enjoy!
