Method
- Preheat oven to 375°
- On a baking sheet lined with parchment paper, add the asparagus, olive oil, shallots, lemon zest, salt, and pepper. Mix well with your hands.
- Add the sliced lemon right on top and bake for about 12 minutes.
- Take them out of the oven and top with grated vegan parmesan cheese, flaky sea salt, and dill.
- Serve and enjoy!
