Roasted Asparagus with Vegan Parmesan

A gluten-free vegan side dish that will knock your socks off. Easy and made with minimal ingredients.

Ingredients
  

  • 1 bunch asparagus trimmed
  • 1 tbsp olive oil
  • salt and pepper
  • 1 lemon zested, and sliced
  • 1 shallot sliced
  • 1-2 tbsp grated vegan parmesan cheese
  • Fresh dill and flaky sea salt for finishing/topping

Instructions
 

  • Preheat oven to 375°
  • On a baking sheet lined with parchment paper, add the asparagus, olive oil, shallots, lemon zest, salt, and pepper. Mix well with your hands.
  • Add the sliced lemon right on top and bake for about 12 minutes.
  • Take them out of the oven and top with grated vegan parmesan cheese, flaky sea salt, and dill.
  • Serve and enjoy!
